kale cravings

When I'm stressed, I cook.  And when I cook, I usually cook healthy.  Not always, certainly, and there are plenty of sugar binges on the side.  But I think I do okay.

So, this ccoking-healthy thing is handy as far as coping with stress, and has served me well in the past.  As long as I don't run out of clean cooking space in the kitchen, which happened this week.  But Thursday I got groceries, and yesterday I made sufficient kitchen inroads to prepare them. 

This was actually pretty fast to cook.  De-rib and chop a bunch of kale and throw in frying pan (a little oil) with salt, celery seed, and turmeric.  Cook down a bit, then add a bunch of lentil sprouts and a can of chickpeas.  Meanwhile, cube 0.5 lb fresh tuna.  Move veg to the outside of the pan, and fry the tuna in the center, with black pepper.  Flavor was not quite there yet, so I added a good dollop of carrot pickle.  Meanwhile, microwave a package of brown rice (yeah I know, but it was a timesaver) then add that to the pan.  Mix and serve.  ...I think that was everything that went in, but I could be missing something. 

I also cooked an acorn squash, and had that on the side. 

All in all, a pretty decent meal, and enough to feed me for two solid days.  Perhaps a smidge too salty.  For a couple of meals, I topped it with some chia seed. 

I still haven't quite figured out what's up with my cravings for kale.  Certainly there are worse things to crave, but it's still a bit odd.

Constructive criticism is also welcome - whatever it is, trust me, I've heard worse.
